Black Bean Burger Recipe with pickled red onion, guacamole and sweet potato fries

Just yummy! This veggie black bean burger is just No. 1. It has everything, from taste to texture and it’s super simple to do. The horseradish dressing, roasted eggplant, guacamole, black bean burger, pickled red onion and red cabbage salad makes it super yummy. And thats not all, we also have a awesome recipe on our wonderful sweet potato that makes this veggie burger something special.

Black Bean Burger No. 1

Burger
400 g black beans, cooked and blended
1/4 cup rolled oats, mixed
1/4 cup Roasted chickpeas seasoned with cayenne, S & P
1 onion
2 pinches of salt
1 pinch of pepper
3 tsp Paprika

Mix together all ingredients and shape into burgers of about 90 grams. Then fry on fairly high heat in canola oil until you get a lovely brown color. Bake in the oven at 300 degrees Fahrenheit for about 5-10 min for a little less juicy texture.

Horsradishmayonnaise (exclude if making it vegan)
Optional mayonnaise recipes + grated horseradish to taste

Pickled red onions
Mandolinad onion massaged in lemon juice

Red cabbage salad
Mandolinad cabbage massaged in lemon, olive oil and salt to taste

Roasted Eggplant
Slice the eggplant into thin slices. Dip in olive oil and place on a oven safe baking tray. Run in the oven at 300 degrees Fahrenheit for about 15 minutes, keeping an eye, they quickly become burnt if you forget!

Guacamole
Mash an avocado with a little lemon juice, salt and crushed garlic
